Midweek Magic: 5 Dalmatian Inspired Dinners That Don’t Require All Day

We all have those Tuesday, Wednesday, or Thursday nights where the expectations and pressure of everyday life can feel like a lot. Between checking in on everyone, showing up at work, and the demands of a busy home, the last thing anyone needs is a twenty-step recipe that requires a culinary degree.

In my kitchen, when it all gets too much, I try to lean into the Dalmatian way of eating: eat what’s local and in season and let the ingredients do the heavy lifting. Here are five midweek meal ideas that bring that Mediterranean soul to your table in under thirty minutes.

1. The Almost Instant Buzara – prawns in Garlic & Wine

A traditional buzara is perfect for a midweek meal as it doesn’t need more than ten or fifteen minutes, in fact the brief time you spend chopping the garlic and parsley takes longer than the actual cooking. Gently saute an embarrassing amount of garlic in some olive oil followed a couple of minutes later with either mussels or large prawns, fresh parsley, a splash of white wine, and breadcrumbs. I also like to add a tablespoon or so of tomato paste but consider it optional. You’ll have a delicious silky sauce in under ten minutes. Serve it with a tomato salad and a loaf of good crusty bread, and let everyone dip into that sauce straight from the pan.

2. Sheet Pan Orada (Sea Bream) with Roasted Lemon

The ultimate set-and-forget Mediterranean meal. Lay your fish fillets on a baking tray surrounded by thinly sliced lemons, olives, and cherry tomatoes. Drizzle generously with your best olive oil and a few sprigs of rosemary. By the time you’ve set the table, made a green salad, and enjoyed a nice chilled glass of pinot grigio, dinner is ready.

3. The Modern Blitva Bowl

We know and love the classic Swiss chard and potatoes, but for a quicker twist, discard the stems, finely chop the leaves, and use quartered baby potatoes. Saute them quickly with olive oil and garlic, and finish with a squeeze of lemon and a tin of good quality tuna or a soft-boiled egg. It’s light, nourishing, and delicious.

4. Pasta sa Šalšom – Summer Tomato Pasta

If you have a jar of homemade tomato sauce (or a really good store-bought one), this is your best friend. Saute some onions until they’re sweet, add the sauce, and stir in a spoonful of capers or salted anchovies for that salty Mediterranean kick. Toss with your favorite pasta and a mountain of grated hard cheese.

5. Grilled Halloumi & Fig Salad

When the struggle is real and you just can’t face the stove for long, a hearty salad is the answer. Sear some halloumi until golden, toss it with fresh greens, walnuts, and sliced figs (or dried ones if it’s off-season). A drizzle of honey and balsamic vinegar ties it all together. It’s elegant enough for a guest but simple enough for a solo lunch.

One more bonus suggestion, and possibly my favourite kind of eating: the antipasto platter. Stop at a good fruit shop or deli on your way home and stock up on any cured meats, cheeses, olives, breads, and pickles you and your family love.

The trick to making these work isn’t the technique, it’s the extra virgin olive oil. Keep a bottle of the good stuff on the table. A final drizzle over almost anything – fish, greens, or even just a slice of bread, transforms even the quickest meal into Mediterranean magic.
