If there’s one Croatian sweet that is beloved by young and old alike, it’s oblatne. These walnut and chocolate wafers are also simple to make, needing only a little patience, and keep well in the fridge. They’re always a welcome sight, maybe not as much as madarica, but hey, they’re a lot less work too! Oblatne are a staple of every celebration, and in fact I’m making a double batch today for a family event this weekend! I am so happy to share my Baka’s recipe with you (and a special thank you to my sister for jotting it down).
What you need:
- one packet oblatne wafers (usually five sheets in a pack)
- 4 eggs (beaten)
- 250g unsalted butter
- 200g ground walnuts
- 1 cup caster sugar
- 100g dark cooking chocolate
What to do:
- Steam the beaten eggs and sugar in a double boiler type set up until thick and creamy, gently stirring with a whisk the whole time. This is the longest step, and it’s crucial you don’t rush it.
- Once thick and while still gently steaming, add the butter (in cut up pieces) and the chocolate, also broken into pieces. Gently stir until all melted.
- Finally, add the walnuts and stir through. Allow to sit until slightly cooled.
- I then divide my filling into four small bowls so there’s an even amount of filling on all four layers.
- Place the first layer of wafer onto some aluminum foil large enough to eventually wrap all the sides. Spread the filling over the top, getting into every corner, then place the next wafer layer on top, add the filling, and repeat until you end up with the fifth and final sheet of wafer. Wrap the whole slab in foil so it’s fully enclosed, and refrigerate to set.
- When you’re ready to serve cut into rectangle or diamond pieces, and enjoy.
